Mexican crispy French fries are a unique and scrumptious twist on standard French fries. They are coated in a delicious blend of flavourings (like chilli powder, smoked paprika, cumin, and lime zest), and are topped with classic ingredients (like queso fresco, jalapeños, avocado crema, and pico de gallo) to provide additional flavour.
Instead of thinking about fries a simply fries, these are about flavour layers. They are essentially a hybrid of nachos and street-style French fries, with everything from heat to creaminess in every bite.
Wash, peel (optional), and cut the potatoes into thin fries—about ¼ inch thick for extra crispiness.
Soak the fries in cold water for at least 30 minutes. This helps remove excess starch and ensures a crisp exterior.
2. Parboil or Soak (Alternative)
If you’re short on time, boil the fries for 4–5 minutes, then drain and dry thoroughly. Otherwise, drain the soaked potatoes and pat dry with a towel.
3. Season
In a large bowl, toss the dried fries with olive oil, smoked paprika, chili powder, garlic powder, cumin, salt, pepper, and lime zest.
4. Cook (Choose Your Method):
Oven-Baked:
Preheat the oven to 425°F (220°C).
Arrange fries in a single layer on a baking sheet lined with parchment paper.
Bake for 20 minutes, flip, and bake another 15–20 minutes until golden and crispy.
Air Fryer:
Preheat to 400°F.
Cook the fries in batches for 15–18 minutes, shaking halfway through.
Deep Fry:
Heat vegetable oil in a deep pan to 350°F.
Fry the potatoes in batches for 3–4 minutes, then remove and let cool. Double fry them again for another 2–3 minutes until golden and super crispy.
5. Finish with Flavor
Once cooked, drizzle lime juice over the fries and toss to coat.
Add your favorite toppings like queso fresco, cilantro, jalapeños, or a dollop of avocado crema or sour cream.
