Chipotle Tofu Chilaquiles in the traditional style includes crispy tortilla chips, a smoky chipotle-tomato sauce, and crumbled tofu for a boost of plant-based protein (no eggs needed!). This is a colorful, spicy, and zesty dish that can be eaten at breakfast, lunch, or dinner! Add some fresh garnishes such as avocado, cilantro, and non-dairy sour cream, and you've got something nutrient-dense and delicious!
For the Sauce

1 block (14 oz) firm tofu, pressed and crumbled
1 tablespoon soy sauce
1 teaspoon chipotle chili powder
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 tablespoon vegetable oil

Instructions
Prepare the Sauce:
Toast the Guajillo Chiles
Heat a dry skillet over medium heat and toast the guajillo chiles for 1-2 minutes until fragrant. Soak them in hot water for 10 minutes until softened, then drain.
Blend
In a blender, combine tomatoes, softened guajillo chiles, chipotle pepper, garlic, onion, and vegetable broth. Blend until smooth.
Cook the Sauce
Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Pour the blended sauce into the skillet, add cumin, smoked paprika, salt, and pepper. Simmer for 10-15 minutes until the sauce thickens slightly.
Prepare the Tofu:
- Heat 1 tablespoon of oil in a non-stick pan over medium heat.
- Add crumbled tofu, soy sauce, chipotle chili powder, smoked paprika, and garlic powder. Sauté for 5-7 minutes until the tofu is slightly browned and flavorful. Set aside.
Prepare the Chips:
- Fried Version: Heat oil in a skillet and fry tortilla triangles in batches until golden and crispy. Drain on paper towels.
- Baked Version: Preheat the oven to 375°F (190°C). Arrange tortilla triangles on a baking sheet, spray with oil, and bake for 10-15 minutes, flipping halfway through, until crispy.
Assemble the Chilaquiles:
- In a large skillet, warm the prepared sauce over low heat.
- Add the chips to the sauce, gently tossing to coat evenly. Cook for 2-3 minutes until the chips soften slightly but still retain some crunch.
- Top with sautéed chipotle tofu.
Garnish and Serve:
Transfer the chilaquiles to serving plates. Garnish with avocado slices, cilantro, vegan sour cream, and other toppings of your choice. Serve immediately with lime wedges on the side.
